‘Albigensian Wight’: This softneck variety stores well and keeps much better than other Mediterranean types. From the south-west of France, it produces large, white, deep flat bulbs.

‘Aquila Wight’: An Italian garlic from the Abruzzo region. This purple-skinned hardneck type has a distinctive and strong flavour.

Elephant garlic is a variety closely related to the leek and the giant of the garlic family producing huge bulbs up to 10cm (4in) across. With a milder, sweeter flavour than true garlic, yet still distinctive, it is well suited to roasting and stores well.
